Apple Cider Donuts

Well, these fun breakfast treats are easy to make and are of course...vegan! Yes, no more do you need to walk by the warm, cinnamon, delicious smelling donuts; you can make your own!


Ingredients

  • 1/2 cup fresh apple cider

  • 1/4 sugar (I use Wholesome Organic Sugar - it is vegan)

  • 2 tbsp of apple sauce (want an extra boost of cinnamon, use organic cinnamon apple sauce!)

  • 2 tbsp olive oil

  • 1 tsp vanilla

  • 1 cup pastry flour (King Arthur is the best)

  • 1 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp fine salt

  • 1/2 tsp cinnamon


Method

  • Pre-heat oven to 350 (I use convection convert for all my baking, if you have an oven that has this setting the temp will decrease to 325 and the fan will run during the cook time)

  • Grease a donut pan with cooking spray

  • To a medium glass bowl, add: apple cider, sugar, apple sauce, oil, and vanilla. Whisk to combine

  • Now add your dry ingredients. Sift flour, baking powder, baking soda and salt into the wet mixture. Add cinnamon. Using a wooden spoon, stir until combined

  • Fill each donut mold with the mixture and bake for 13-15 minutes (I usually bake for 13 minutes)

  • Once baked through, remove from oven. Place cooling rack on top of the donut pan, flip the rack and pan over so that the pan is on top of the rack and lift the pan off the donuts

  • Let cool for 10 minutes

  • Brush melted vegan butter on top of the donut and then dip into a cinnamon sugar blend (for a 1/4 cup of sugar mix with 1 tsp cinnamon)

  • Now, enjoy with a nice warm mug of apple cider!
