I posted a BBQ Bowl on my Facebook page earlier this month, and without waiting any longer, here is the recipe. Super simple, and...delicious!
This bowl is great for any time of year, the coleslaw is amazing and it is definitely great to add to the bowl but also add as a side to other meals especially in the summer months. The beans are packed with protein and the quinoa delivers a punch of nutrition and flavor. Of course, there is nothing like having fresh corn! This is an all around delicious bowl that is easy to make.
Ingredients:
Quinoa
1 cup quinoa
2 cups veg stock
6 bay leaves
1 tsp cumin
1/2 tsp salt
Fresh ground pepper
Corn
Fresh corn on the cob...plain and simple
Coleslaw
3 cups cole slaw tri-color mix
3 tablespoons vegan mayo (I use "Just Mayo" by Hampton Creek)
1 tablespoon white vinegar
1/4 teaspoon agave nectar
1/8 teaspoon salt
Pinch of black pepper
Pinch of onion powder
Pinch of dried parsley
BBQ Beans
15.5 ounce-can cannellini beans drained and rinsed
1/3 cup vegan BBQ sauce
2 tablespoons minced red onion
Peppers
Totally up to you!
Instructions:
Quinoa - cook per package instructions adding in the bay leaves, once finished cooking, add in the spices and remove the bay leaves
Corn - boil or grill fresh corn on the cob, when done, either remove from the stalk or keep on the stalk - totally your preference. Throw on some butter, or spices, again completely up to you and your preference - there is no wrong way to eat corn.
Coleslaw - to a bowl add all of the ingredients and stir to combine
BBQ Beans - to a small sauce pan add ingredients and heat until warmed
Peppers - add freshly chopped red pepper to the bowl for some crunch, or grill a poblano pepper to get a char then slice and add to the bowl for smoky flavor
Once everything is done, simply add it to a bowl and enjoy!
