Can this Creamy Vegan Broccoli and Cheddar Soup Really be Good for You?

In a word - YES! This delicious and creamy soup will leave you wanting a second bowl. It's quick to make and perfect for satisfying comfort food cravings, especially on a cold winter day. The only indulgent ingredient is the vegan cheddar. Let's get into it, shall we?

Ingredients

  • 450 grams broccoli

  • 2 cloves garlic

  • 1 cup nutritional yeast

  • 1 tsp salt

  • fresh ground pepper

  • 1 cup Eden Soy Fortified Soy Milk

  • 1 cup vegan cheddar cheese

  • 1 leek


Method

  1. Trim and wash broccoli (crowns and stems).

  2. Peel garlic.

  3. To a stockpot, add broccoli and garlic and cover with water.

  4. Bring to a boil and simmer until slightly tender.

  5. Add boiled broccoli and garlic to a high speed blender along with 1/2 cup of the water.

  6. Trim, slice, and wash leek.

  7. Heat small skillet on medium and add a small amount of oil.

  8. Fry leek with a pinch of salt, until tender and slightly browned.

  9. Add leek, nutritional yeast, cheese, soy milk, salt, and pepper to blender.

  10. Blend until smooth.

  11. Pour into bowls and serve with a slice of sourdough bread and top with some crispy chili sauce (optional).
