Ingredients
450 grams broccoli
2 cloves garlic
1 cup nutritional yeast
1 tsp salt
fresh ground pepper
1 cup Eden Soy Fortified Soy Milk
1 cup vegan cheddar cheese
1 leek
Method
Trim and wash broccoli (crowns and stems).
Peel garlic.
To a stockpot, add broccoli and garlic and cover with water.
Bring to a boil and simmer until slightly tender.
Add boiled broccoli and garlic to a high speed blender along with 1/2 cup of the water.
Trim, slice, and wash leek.
Heat small skillet on medium and add a small amount of oil.
Fry leek with a pinch of salt, until tender and slightly browned.
Add leek, nutritional yeast, cheese, soy milk, salt, and pepper to blender.
Blend until smooth.
Pour into bowls and serve with a slice of sourdough bread and top with some crispy chili sauce (optional).
