Do you ever want good falafel with creamy hummus? There are some take-aways that have the most amazing falafel and hummus but, since it is not always possible to get to these restaurants - how can you make them at home? Well, see below...now you can make your own vegan falafel, and enjoy them any time you are craving this delicious middle eastern staple.
Ingredients
1 cup of dried chickpeas
2 cloves garlic
1 cup coarsely chopped onion
½ cup of loosely packed parsley
½ cup of loosely packed cilantro
¼ cup of water
½ cup of fine dry bread crumbs (vegan, 365 brand is best)
½ tsp of baking powder
1 tbsp cumin
1 tsp sweet paprika
1 ¼ tsp salt
Fresh ground pepper
Method
FIRST - Partially cook the chickpeas
To a pot, add the dried chickpeas and cover with about 1-2 inches of water.
Bring to a boil and simmer for 10 minutes. Turn off heat and put pot aside for 8 hours.
Then drain the chickpeas.
Make the falafel
To a food processor, add garlic and pulse until finely chopped.
Next add onion, parsley, cilantro, and chop until finely chopped (but do not purée).
Add this mixture to a medium sized bowl. Put aside.
Next add the chickpeas to the food processor and pulse until they look like fine crumbs.
Add the water and pulse again – do not purée.
Add the chickpeas to the herbs in the bowl and mix to incorporate.
Add the spices, bread crumbs, baking powder, salt and pepper.
Mix well to incorporate through the chickpeas.
You can now begin to make your falafel, or place to chill for one hour. If you make the falafel straight away, be sure your to dampen your hands with water. You can choose to make small patties, small round bites, or burger sized patties.
Once your patties are made, heat a cast iron skillet on medium, when ready add the oil (a decent amount for shallow frying). Add your patties and cook until browned on both sides. Place on a paper towel to absorb excess oil before serving.
Serve with
Rice, hummus, and a good salad with pickled onions and other veg of your choice.
