I bought some radishes today and I cut off the stems and thought, "I do not want to throw this away, that is wasteful". I looked through some old recipes I had and remembered one for #pesto - you know before I went vegan. So with some improvising I made some yummy pesto in 5 minutes flat!
Ingredients: 1 bunch of #radishgreens (about 2 cups) 2 cloves garlic, peeled 1/4 c EVOO 1/2 c vegan parmesan (I used #FollowYourHeart) 1/4 c pine nuts Juice from 1/2 lemon Salt and pepper
Instructions: To a food processor add garlic, greens, nuts, olive oil, parm, salt and pepper, lemon juice. Pulse on low until it meets the consistency of your liking.
Great on pasta, toast, topped on cream cheese, however you like...just enjoy!
