Savory sausage and rice

I make this from time to time and I thought it was time to share the recipe!


So...here we go.


Ingredients

  • 1 package of Field Roast Italian Sausage, plastic removed, and cut into 1/4-1/2 inch rounds

  • 1 package, or 3-4 cups of brussel sprouts, washed, trimmed, and cut in half

  • 1 medium onion, sliced

  • 5 cloves garlic, minced

  • EVOO

  • 1/4 cup of vegan butter (like Miyoko's)

  • 1 cup veg stock

  • 1/2 cup white wine

  • 1/4 cup of a good balsamic (for this I use Gustare Oils and Vinegars, Cinnamon Pear)

  • 2 servings of rice (this time I used RightRice Brown Butter Sage - yes it is vegan!)

  • Salt and pepper to taste

Method

  1. Start your rice and cook according to directions.

  2. Heat EVOO in a pan, add your brussel sprouts, a big pinch of salt, and cook until charred

  3. Next add your onion, another pinch of salt, and cook until caramelized

  4. Now, add in the sausage and garlic and cook until the sausage browns a bit

  5. Make some room in the pan to add the butter, allow to melt a bit

  6. Now, add in the stock, wine, and balsamic along with some salt, and fresh ground pepper

  7. Cook on medium for about 5-10 minutes, or until the liquid reduces to half

  8. Serve next to or on top of your rice and enjoy!
