What to eat on the go?

Have you ever felt it to be challenging to figure out what you would like to eat for lunch? Have you ever been out and about and realize it is lunch time and all you see are fast food restaurants? Have you broken down and had vegan fast food item because you are hangry?


Well, I have some great tips for you because I often find myself in this situation especially when I am running errands.


First - you can pack a lunch. Sure, why not, right? Just because you are running errands doesn't mean you don't pack a lunch. Get out your reusable lunch bag, throw an ice pack in there and load it up with healthy vegan options. Here are just a few examples: apple, banana, small bowl of berries, a simple PB&J sandwich (using natural PB and organic natural jam) on whole grain bread, a chickpea "tuna" sandwich, or an open faced balsamic tomato sandwich. Yes open faced. Let's take a pause here, when you are out and about running around, going here and there, remember to take time for you to pause. So pack your lunch, and find a place to sit outdoors for even 15 minutes and enjoy your healthy vegan open faced sandwich. Look, if you were going to a fast food place, you would take that amount of time to order, eat, and go so why not be healthy about it?

Pack a healthy lunch.

2 slices of Mestemacher Fitness Bread (toasted)

2 tbsp of hummus (like Engine 2, divided)

1 cup raw spinach (divided)

1 slice of white or red onion (divided)

2 large slices of heirloom tomato (divided)

10 basil leaves (chopped, divided)

generous drizzle of balsamic vinegar (like Gustare, 18 year traditional)


Toast your bread, remove when it is done to your liking

1 tbsp of hummus on each slice of bread

Top with spinach, onion, tomato, basil

Put both slices into your to-go container face up

Now, drizzle the balsamic over each slice



Another idea to help you with errand day and eating healthy, is to get up early and get to the store(s) for when they open.


Your health and your mission to saving animals (by leaving them off your plate) is up to you. Don't go for the quick and easy food - be sure to stay fit and healthy by packing your own lunch. Your heart and the animals will thank you.
